So yesterday’s interview went great. She told me the one thing I need to work on is that I ramble when I’m nervous. Duh, I ramble when I am not nervous to. You should see some of the crap I delete before posting lol. That’s done and behind me now I can take a breath.
Today I am making sweet potato jerky for my puppy niece. My sister’s dog Chole is allergic to everything. She can’t have grain or meat, so she doesn’t get treats unless you can find sweet potato fries or chips that are just sweet potato. No meat coating or other additives. I was going to buy her some sweet potato fries from TJMaxx the other day, but for the money I could buy a bunch of sweet potatoes and jerkify them myself. So that is what I am doing. I made a batch on Saturday night and I had enough left over for a second batch which I am doing right now.
First off, let me just say, mandolines are awesome! Sweet potatoes are kind of hard to cut, but that is what I have a big strong husband for. Them all being the same thickness also means they all cook at about the same rate. So I have only a couple that weren’t completely done in the first batch.
I didn’t follow this recipe, but had I found it sooner, I would have. The difference is I scrubbed and peeled my potatoes, and I baked them on a wire rack to increase air circulation. Oh and mines were only about a quarter-inch thick.
Use fresh, raw sweet potatoes, preferably large ones.
Preheat the oven to 225 F (107 C).
Scrub the sweet potatoes, making sure there is no mold on the skins. The number of potatoes you use will depend on the amount of jerky strips you want to make.
Cut the sweet potatoes lengthwise into 1/2- to 2/3-inch strips, and place them on a parchment-lined baking sheet.
Bake the sweet potato strips for 3 to 4 hours. For crunchier treats, bake them longer. (Don’t be afraid to test them yourself along the way.)
Allow the strips to cool before storing them in an airtight container.
